Instructions

  1. Wash the sardines, leave them ungutted and pat them thoroughly dry.
  2. Rub them generously with coarse sea salt.
  3. Thread onto skewers and grill over hot embers for 3–4 minutes per side until the skin blisters.
  4. Drizzle with olive oil and serve with lemon.
