Lemon Chicken Skewers
Chicken cubes marinated in lemon, garlic and parsley, threaded onto skewers and grilled over high heat.

Ingredients · for 4 servings
800 g chicken breast fillet
3 lemons
5 cloves garlic
1 bunch flat-leaf parsley
1 tsp paprika (sweet)
1 red bell pepper
1 red onion
6 tbsp olive oil
Salt, pepper
Instructions
- Cut the chicken breast into 3 cm cubes and marinate for at least 1 hr chilled with the juice of two lemons, the finely grated garlic, chopped parsley, paprika, 4 tbsp olive oil and pepper.
- Cut the pepper and red onion into roughly equal pieces so everything cooks evenly on the skewer; soak wooden skewers in water for 20 min.
- Take the meat out of the marinade, let it drain briefly and only now season with salt – this keeps it juicy inside.
- Thread meat, pepper and onion alternately onto eight skewers and brush all over with the remaining olive oil.
- Grill on a hot grill or in a grill pan for 3–4 min per side, 10–12 min total, until the meat has dark grill marks and the juices run clear.
- Let the skewers rest for 3 min and serve with the third lemon cut into wedges and a little chopped parsley.
