Yaourti me Glyko tou Koutaliou

Instructions

  1. Mix the pitted cherries with the sugar in a bowl and let stand covered for 3 hours until they have visibly released juice.
  2. Put the fruit with its juice, the water and the cinnamon stick into a wide pot and bring to a boil over medium heat, skimming off the rising foam.
  3. Simmer gently uncovered for 30–35 min. until the syrup forms a thick thread off the ladle and a drop holds its shape on a cold plate.
  4. Stir in the juice of half a lemon so the syrup doesn't crystallize, and let the sweet cool completely.
  5. Roughly chop the walnuts and toast in a dry pan for 3 min. until fragrant.
  6. Spoon the yogurt into four bowls, top each with 2 tbsp of the spoon sweet and its syrup, sprinkle with walnuts and serve well chilled.
