Ingredients · for 8 servings
450 g flour (type 550)
1 tsp dried yeast
220 ml water
100 ml olive oil
1 tsp salt
1 tsp sugar
100 g sesame seeds
1 tbsp anise seeds
Instructions
- Dissolve yeast and sugar in 220 ml lukewarm water and let stand for 10 min, until the surface ripples.
- Add flour, salt, anise seeds and 80 ml olive oil and knead everything for 8 min into a firm, supple dough that comes away smoothly from the bowl.
- Let the dough rise covered for 45 min, until visibly risen, then divide into 24 equal pieces.
- Roll each piece into a pencil-thin strand about 20 cm long, brush with the remaining olive oil and roll all around thickly in sesame seeds.
- Place the sticks spaced apart on two baking trays and bake in the oven preheated to 180°C for 25–30 min, until evenly light brown.
- Lower the heat to 120°C and dry the sticks for another 10 min, then let cool completely and store airtight – this keeps them crunchy for weeks.
