Ingredients · for 8 servings
300 g flour (type 550)
200 g pekmez (grape molasses)
150 ml olive oil
200 ml orange juice
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1 tsp ground cloves
150 g walnuts
1 orange (zest)
Instructions
- Preheat the oven to 175 °C and grease a 24 cm springform pan with olive oil, then dust with a little flour.
- Roughly chop the walnuts, setting aside 2 tbsp for the top, and finely grate the orange zest.
- Stir the pekmez, olive oil, orange juice and orange zest until smooth, mix in the baking soda and let stand for 2 min. until the mixture foams slightly.
- Mix the flour, baking powder, cinnamon and ground cloves, stir into the liquid ingredients in two batches, mixing only until the batter is just smooth; fold in the walnuts.
- Pour the batter into the pan, smooth the top, sprinkle with the remaining walnuts and bake for 45–50 min. until a skewer inserted in the center comes out clean.
- Let the cake rest in the pan for 15 min., then turn out onto a rack and serve lukewarm or cold in slices.
