Ingredients · for 2 servings
6 slices white bread (stale)
3 eggs
100 ml milk
1/2 tsp salt
40 g butter
1 tsp pul biber (Turkish red pepper flakes)
1/2 bunch parsley
Instructions
- Whisk the eggs with the milk and salt in a shallow dish until no streaks of egg white remain; finely chop the parsley.
- Dip the bread slices one by one for 10 sec. per side in the egg-milk mixture so they soak it up without getting soggy.
- Melt half the butter in a nonstick pan over medium heat until it foams but does not yet brown.
- Lay the slices side by side and fry for 2–3 min. until the underside is evenly golden brown and firm.
- Turn, add the remaining butter to the edge of the pan, and fry for another 2 min. until the second side has color too and the egg is fully set.
- Place immediately on warmed plates, sprinkle with pul biber and parsley, and serve hot.
