Sahanda Yumurta (Fried Eggs in Butter)

Ingredients · for 2 servings
4 eggs
40 g butter
1 tsp pul biber (Turkish pepper flakes)
1 flatbread
1 tsp coarse salt

Instructions
- Take the eggs out of the fridge in good time and crack each one into a small cup – this way the yolks stay whole when they go into the pan.
- Melt the butter in a small pan over medium heat and let it sizzle for 1–2 min. until it smells nutty and browns slightly.
- Carefully slide the eggs in one by one at the edge of the pan and immediately turn the heat down to gentle.
- Fry for 3–4 min., repeatedly spooning butter over the yolks, until the whites are set white.
- For firm yolks, cover the pan for the last minute – otherwise the yolks stay runny.
- Sprinkle with coarse salt, pepper and pul biber and bring the pan straight to the table with warm flatbread for dipping.
