Sahanda Yumurta (Fried Eggs in Butter)

Instructions

  1. Take the eggs out of the fridge in good time and crack each one into a small cup – this way the yolks stay whole when they go into the pan.
  2. Melt the butter in a small pan over medium heat and let it sizzle for 1–2 min. until it smells nutty and browns slightly.
  3. Carefully slide the eggs in one by one at the edge of the pan and immediately turn the heat down to gentle.
  4. Fry for 3–4 min., repeatedly spooning butter over the yolks, until the whites are set white.
  5. For firm yolks, cover the pan for the last minute – otherwise the yolks stay runny.
  6. Sprinkle with coarse salt, pepper and pul biber and bring the pan straight to the table with warm flatbread for dipping.
