Instructions

  1. Cut the potatoes into thin slices and fry them in olive oil for 12 minutes until golden.
  2. Add the onions and pepper strips and fry for another 8 minutes.
  3. Stir in garlic and paprika powder, then season with salt and pepper.
  4. Make four hollows and crack an egg into each one.
  5. Cover and let set for 4 minutes until the whites are firm and the yolks still runny.
  6. Scatter with parsley and serve straight from the pan.
