Ingredients · for 4 servings
600 g waxy potatoes
2 peppers
2 onions
4 eggs
2 garlic cloves
6 tbsp olive oil
1 tsp paprika powder
1 bunch of parsley
Salt
Pepper
Instructions
- Cut the potatoes into thin slices and fry them in olive oil for 12 minutes until golden.
- Add the onions and pepper strips and fry for another 8 minutes.
- Stir in garlic and paprika powder, then season with salt and pepper.
- Make four hollows and crack an egg into each one.
- Cover and let set for 4 minutes until the whites are firm and the yolks still runny.
- Scatter with parsley and serve straight from the pan.
