Ingredients · for 8 servings
300 g flour
150 g cold butter
120 g sugar
2 egg yolks
1 egg
1 lemon (zest)
1 pinch of salt
1 tsp baking powder
400 g apricot or cherry jam
Instructions
- Quickly knead flour, butter, sugar, egg yolks, egg, lemon zest, baking powder and salt into a shortcrust pastry.
- Wrap the pastry in cling film and chill for 1 hour, otherwise it will tear when rolled out.
- Roll out two thirds of the pastry and line a greased tart tin with it.
- Spread the jam evenly over it, leaving a border free.
- Cut strips from the remaining pastry and lay them on top as a lattice.
- Bake at 180 °C for 35 minutes until golden and let cool completely so the filling sets.
