Instructions

  1. Quickly knead flour, butter, sugar, egg yolks, egg, lemon zest, baking powder and salt into a shortcrust pastry.
  2. Wrap the pastry in cling film and chill for 1 hour, otherwise it will tear when rolled out.
  3. Roll out two thirds of the pastry and line a greased tart tin with it.
  4. Spread the jam evenly over it, leaving a border free.
  5. Cut strips from the remaining pastry and lay them on top as a lattice.
  6. Bake at 180 °C for 35 minutes until golden and let cool completely so the filling sets.
