Ingredients · for 4 servings
1.2 kg ripe tomatoes
1 onion
2 garlic cloves
80 g short-grain rice
800 ml vegetable stock
6 tbsp olive oil
1 tsp sugar
150 g feta
Oregano
Basil
Salt
Pepper
Instructions
- Score the tomatoes crosswise, blanch them briefly, peel and dice them.
- Sweat onion and garlic in olive oil until translucent.
- Add the tomatoes, season with sugar and salt and reduce for 15 minutes.
- Pour in the stock and cook the rice in it for 15 minutes until tender.
- Season with oregano and pepper.
- Serve with crumbled feta, basil and olive oil.
