Instructions

  1. Quarter the white cabbage, cut out the core and cut the leaves into finger-wide strips; peel the carrots and potatoes and cut into 2 cm pieces.
  2. Roughly dice the onions, finely chop the garlic and cut the leek into rings.
  3. Heat the olive oil in a large pot and sauté the onions, leek and garlic over medium heat for 8 min. until golden.
  4. Add the cabbage and let it wilt down for 5 min. while stirring, then stir in the bay leaves and thyme and pour in the vegetable stock.
  5. Simmer gently covered for 40 min., then add the carrots and potatoes and cook for another 25 min. until everything is very soft and the broth has become flavorful.
  6. Remove the bay leaves, season generously with salt and pepper and serve the soup in deep bowls with bread.
