Cabbage Soup
Rustic cabbage soup with carrots, potatoes and onions that simmers a long time until everything is soft and full-flavored.

Ingredients · for 4 servings
1 small white cabbage (approx. 1 kg)
3 carrots
500 g potatoes
2 onions
1 leek
3 cloves garlic
1.5 l vegetable stock
3 tbsp olive oil
2 bay leaves
1 tsp thyme
Salt, pepper
Instructions
- Quarter the white cabbage, cut out the core and cut the leaves into finger-wide strips; peel the carrots and potatoes and cut into 2 cm pieces.
- Roughly dice the onions, finely chop the garlic and cut the leek into rings.
- Heat the olive oil in a large pot and sauté the onions, leek and garlic over medium heat for 8 min. until golden.
- Add the cabbage and let it wilt down for 5 min. while stirring, then stir in the bay leaves and thyme and pour in the vegetable stock.
- Simmer gently covered for 40 min., then add the carrots and potatoes and cook for another 25 min. until everything is very soft and the broth has become flavorful.
- Remove the bay leaves, season generously with salt and pepper and serve the soup in deep bowls with bread.
