Instructions

  1. Halve the leek lengthwise, wash thoroughly, and cut into fine rings; finely dice the onion and roughly cut up the processed cheese.
  2. Heat the butter in a large pot and fry the ground beef over high heat for 6–8 min. until crumbly and browned, until no more liquid remains in the pot.
  3. Add the onion and leek and sauté for 5 min. over medium heat until the leek is soft and translucent.
  4. Pour in the beef broth and simmer gently uncovered for 10 min.
  5. Turn the heat to the lowest setting, stir in the processed cheese and cream, and let melt for 4–5 min. while stirring constantly, the soup must not boil anymore or the cheese will curdle.
  6. Season with paprika powder, salt, and pepper, and serve hot in deep bowls.
