Satsumaimo no Remon Ni

Ingredients · for 4 servings
800 g sweet potatoes
1 organic lemon
80 g sugar
300 ml water
1 tbsp mirin
1 pinch salt
Instructions
- Wash the sweet potatoes, cut unpeeled into 1.5 cm thick slices and place them in cold water for 10 min. so the starch washes out.
- Wash the lemon in hot water, cut half into thin slices and squeeze the juice from the other half.
- Bring the water, sugar, mirin and the pinch of salt to a boil in a wide pot and place the drained sweet potato slices in a single layer.
- Distribute the lemon slices over the top, lay a cut piece of parchment paper directly onto the surface and simmer covered over low heat for 15 min.
- Remove the paper, add the lemon juice and continue cooking uncovered for 6–8 min. until the slices are soft but don't fall apart when lifted and the liquid has turned syrupy.
- Lift the slices with a little liquid into a shallow dish and serve lukewarm or well chilled as a side dish or small sweet.
