Chickpea and vegetable stew from Murcia with pumpkin, pear and mint – sweet and savoury.

Ingredients · for 6 servings
400 g cooked chickpeas
300 g pumpkin
200 g green beans
2 potatoes
1 firm pear
1 onion
2 tomatoes
1 tbsp paprika
1 pinch of saffron
Fresh mint
Instructions
- Sauté the onion, add the grated tomatoes and paprika.
- Cover the chickpeas, beans, diced pumpkin and potatoes with water and simmer for 30 minutes.
- Add the pear wedges and saffron, cook for another 15 minutes.
- Season with fresh mint and serve hot.
