Instructions

  1. For the dough, rub 150 g cold butter in flakes into the flour, baking powder and 1 tsp salt between your fingers until crumbly, then add the egg and yogurt and quickly knead into a smooth, pliable dough; chill covered for 30 min.
  2. Finely dice the onions and sauté in the remaining butter over medium heat for 6–7 min. until soft and lightly golden.
  3. Add the ground beef, break it up with a spoon and fry for 8–10 min. until all the liquid has evaporated and the meat starts to brown.
  4. Season with paprika powder, cumin, salt and pepper, stir in the chopped parsley and let the filling cool completely.
  5. Halve the dough, roll each half on a floured surface into a rectangle about 3 mm thick, place the filling as a strip lengthwise, fold the dough over it and press the edge firmly with a fork.
  6. Place the rolls on a baking sheet lined with parchment, cut into 4 cm wide pieces before baking and bake at 180 °C for 30–35 min. until light golden brown; serve warm dusted with powdered sugar.
