Ingredients · for 6 servings
400 g flour
200 g butter
1 egg
100 g yogurt
1 tsp baking powder
400 g ground beef
2 onions
1 tsp paprika powder
1 tsp cumin
1/2 bunch parsley
2 tbsp powdered sugar

Instructions
- For the dough, rub 150 g cold butter in flakes into the flour, baking powder and 1 tsp salt between your fingers until crumbly, then add the egg and yogurt and quickly knead into a smooth, pliable dough; chill covered for 30 min.
- Finely dice the onions and sauté in the remaining butter over medium heat for 6–7 min. until soft and lightly golden.
- Add the ground beef, break it up with a spoon and fry for 8–10 min. until all the liquid has evaporated and the meat starts to brown.
- Season with paprika powder, cumin, salt and pepper, stir in the chopped parsley and let the filling cool completely.
- Halve the dough, roll each half on a floured surface into a rectangle about 3 mm thick, place the filling as a strip lengthwise, fold the dough over it and press the edge firmly with a fork.
- Place the rolls on a baking sheet lined with parchment, cut into 4 cm wide pieces before baking and bake at 180 °C for 30–35 min. until light golden brown; serve warm dusted with powdered sugar.
