Instructions

  1. Clean the mussels and discard any that are already open.
  2. Sweat the onion and garlic in olive oil until translucent, then add the grated tomatoes and paprika.
  3. Deglaze with the white wine, add the bay leaf and bring to the boil.
  4. Add the mussels, cover and steam for 5 minutes until they open.
  5. Sprinkle with plenty of parsley and serve with bread.
