Mejillones a la Marinera
Mussels in a white wine and tomato broth with onion and parsley.

Ingredients · for 4 servings
1.5 kg mussels
1 onion
3 garlic cloves
2 tomatoes
200 ml white wine- 1 bay leaf
1 tsp paprika
Parsley
Olive oil
Instructions
- Clean the mussels and discard any that are already open.
- Sweat the onion and garlic in olive oil until translucent, then add the grated tomatoes and paprika.
- Deglaze with the white wine, add the bay leaf and bring to the boil.
- Add the mussels, cover and steam for 5 minutes until they open.
- Sprinkle with plenty of parsley and serve with bread.
