Kataifi
Shredded angel-hair pastry rolls with a walnut filling in lemon syrup.

Ingredients · for 12 servings
500 g kataifi pastry
300 g walnuts
150 g butter
2 tsp cinnamon
50 g sugar
1 egg white
500 g sugar for the syrup
400 ml water
1 lemon
1 cinnamon stick
Instructions
- Chop the walnuts and mix with the cinnamon, sugar and egg white.
- Pull the kataifi pastry apart in portions, place the filling on top and roll up tightly.
- Set the rolls closely together in a dish and pour over the melted butter.
- Bake at 170 °C for 45 minutes until golden.
- Boil the syrup, let it cool and pour it over the hot pastry – leave to soak for several hours.
