Paper-thin dough ribbons, fried crisp and sprinkled with honey syrup, cinnamon, and chopped walnuts.

Ingredients · for 8 servings
400 g flour
3 eggs
2 tbsp orange juice
2 tbsp ouzo
1 tbsp olive oil
1 pinch salt
400 g honey
150 g sugar
200 ml water
100 g walnuts
1 tsp cinnamon
1 l frying oil
Instructions
- Whisk together the eggs, orange juice, ouzo, olive oil, and salt, work in the flour, and knead for 10 min. into a firm, smooth dough; let rest covered for 30 min.
- Bring the honey, sugar, and water to a boil and simmer for 8–10 min. into a still-thin syrup; keep warm over very low heat.
- Quarter the dough and roll out each piece paper-thin, until your hand shows through underneath, then cut into strips of about 8 × 25 cm.
- Heat the frying oil to 170°C, slide in a strip, and immediately twist it into a loose roll with two forks.
- Fry each diple for 30–40 sec. until light golden brown, drain briefly on paper towels, and dip while still hot into the warm syrup for 5 sec.
- Layer loosely on a platter, sprinkle with chopped walnuts and cinnamon, and serve warm while still crisp.
