Ingredients · for 6 servings
400 g matjes or salted herring fillets
400 g cooked beetroot
3 boiled potatoes
2 apples
2 pickled gherkins
1 onion
250 g sour cream
2 tbsp mayonnaise
1 tsp sugar
Salt
Pepper
Instructions
- Soak the herring, pat dry and cut into cubes.
- Dice the beetroot, potatoes, apples, gherkins and onion finely as well.
- Stir the sour cream together with the mayonnaise, sugar, salt and pepper.
- Fold everything together – the salad turns a vivid pink.
- Chill for at least 4 hours to let the flavours develop.
