German pickled herring rolls with gherkin, onion and mustard seeds.

Ingredients · for 4 servings
8 herring fillets (desalted)
2 pickled gherkins
2 onions
500 ml water
250 ml white wine vinegar
2 tbsp sugar
2 tsp mustard seeds
2 bay leaves
1 tsp peppercorns
2 tbsp medium-hot mustard

Instructions
- Rinse the herring fillets in cold water and pat them dry.
- Spread the inside thinly with mustard.
- Place a strip of gherkin and a little onion on each, roll them up and fix them with a wooden skewer.
- Bring water, vinegar, sugar, mustard seeds, bay, peppercorns and salt to a boil and let it cool completely.
- Layer the rolls with onion rings in a jar and pour the cold brine over them.
- Let them steep in a cool place for at least 3 days, then serve with rye bread.
