Ingredients · for 4 servings

Instructions

  1. Rinse the herring fillets in cold water and pat them dry.
  2. Spread the inside thinly with mustard.
  3. Place a strip of gherkin and a little onion on each, roll them up and fix them with a wooden skewer.
  4. Bring water, vinegar, sugar, mustard seeds, bay, peppercorns and salt to a boil and let it cool completely.
  5. Layer the rolls with onion rings in a jar and pour the cold brine over them.
  6. Let them steep in a cool place for at least 3 days, then serve with rye bread.
