500 g large white beans (Gigantes)
2 onions
3 garlic cloves
800 g passata
1 bunch dill
1 bunch parsley
150 ml olive oil
1 tsp sugar
Salt
Pepper
Instructions
- Soak the beans overnight, then simmer for 45 minutes until tender and drain.
- Sweat the onions and garlic in olive oil until translucent.
- Add the tomatoes, sugar, salt and pepper and reduce for 10 minutes.
- Transfer the beans to a baking dish with the sauce and herbs.
- Bake at 180 °C for 40 minutes until the surface browns lightly.
