Instructions

  1. Melt the butter and let cool to lukewarm, separate the eggs and preheat the waffle iron.
  2. Mix the flour, baking powder, sugar and salt, add the egg yolks, milk, melted butter and vanilla extract, and stir into a smooth, thick batter.
  3. Whisk the egg whites with a pinch of salt to stiff peaks and fold in gently in two batches — don't stir or the batter will deflate.
  4. Let the batter rest for 10 min. and brush the waffle iron thinly with butter.
  5. Pour in about 1 ladle of batter per waffle and bake for 3–4 min. until golden brown and no more steam escapes from the iron.
  6. Let the finished waffles cool briefly on a rack so they stay crisp, dust thickly with powdered sugar and serve at once.
