Oven Pancake with Berries
Thick pancake that puffs up high in a hot oven, topped with mixed berries and dusted with powdered sugar.

Ingredients · for 4 servings
4 eggs
150 g flour
300 ml milk
2 tbsp sugar
1 tsp vanilla extract
1 pinch salt
40 g butter
300 g mixed red berries
2 tbsp powdered sugar for dusting
Instructions
- Preheat the oven to 220 °C top/bottom heat and place a 26 cm ovenproof pan or dish inside to get it really hot.
- Whisk eggs, milk, sugar, vanilla extract and a pinch of salt, sift in the flour and stir to a smooth, runny batter; let stand for 10 min.
- Pick over the berries, halve the larger fruit and drain everything well on kitchen paper.
- Add the butter to the hot dish, let it melt briefly and pour in the batter immediately – it should sizzle, otherwise the pancake won't puff up.
- Bake without opening the oven for 18–22 min., until the edge has puffed up high and turned deep golden brown and the center feels set.
- Scatter the berries over the hot pancake, dust generously with powdered sugar and serve immediately straight from the dish.
