Goat Cheese Tartine with Honey
Toasted country bread with goat cheese, briefly grilled and drizzled with honey and thyme.

Ingredients · for 2 servings
4 slices country bread
200 g goat cheese log
3 tbsp honey
1 tsp thyme
1 tbsp olive oil
1/2 tsp coarsely ground pepper
40 g walnuts
1 handful arugula
Instructions
- Preheat the oven broiler to 240°C and line a baking sheet with parchment.
- Brush the bread slices thinly with olive oil and toast on the sheet for 3-4 min. until the edges are crisp but the center stays soft.
- Cut the goat cheese log into eight rounds about 1.5 cm thick and place two rounds on each slice of bread.
- Slide the tartines under the broiler for 4-5 min. until the cheese flows softly and shows light brown spots on top - no longer, or it will dry out.
- Meanwhile toast the walnuts in a dry pan for 2-3 min. until fragrant and chop them coarsely.
- Drizzle the hot tartines with honey, sprinkle with thyme, walnuts and pepper and serve immediately with a few arugula leaves.
