Fagiolini in Umido
Green beans slowly braised in tomato sauce with garlic.

Ingredients · for 4 servings
800 g green beans
500 g chopped tomatoes
1 onion
3 garlic cloves
1 bunch of basil
5 tbsp olive oil
1 tsp sugar
Salt
Pepper
Instructions
- Trim the beans and blanch them in salted water for 5 minutes, then refresh in cold water.
- Sweat onion and garlic in olive oil until translucent.
- Add the tomatoes, season with sugar, salt and pepper and reduce for 10 minutes.
- Fold in the beans and braise covered over low heat for 20 minutes until very tender.
- Scatter with basil and serve warm or lukewarm.
