Ingredients · for 4 servings
600 g carrots
1 lemon
4 tbsp olive oil
1 tsp Dijon mustard
1 tsp honey
1 bunch parsley
Salt
Pepper
Instructions
- Peel the carrots and grate them finely.
- Whisk the lemon juice with mustard, honey, salt and pepper.
- Slowly stir in the olive oil until the vinaigrette turns creamy.
- Toss the carrots in the dressing.
- Let sit for 30 minutes and scatter parsley on top.
