Instructions

  1. Peel the carrots and grate them finely.
  2. Whisk the lemon juice with mustard, honey, salt and pepper.
  3. Slowly stir in the olive oil until the vinaigrette turns creamy.
  4. Toss the carrots in the dressing.
  5. Let sit for 30 minutes and scatter parsley on top.
