Marinated beef strips seared over high heat and served on rice, topped with sesame, leek and a fried egg.

Ingredients · for 4 servings
600 g beef (thinly sliced)
5 tbsp soy sauce
3 tbsp mirin
2 tbsp sake
1 tbsp sugar
3 cloves garlic
1 tbsp grated ginger
2 tbsp sesame oil
400 g short-grain rice
1 bunch scallions
1 tbsp sesame seeds
4 eggs
Instructions
- Mix soy sauce, mirin, sake, sugar, the finely grated garlic, ginger and 1 tbsp sesame oil and marinate the beef in it for 20 min.
- Rinse the rice thoroughly, cook with 500 ml water for 12 min. and let steam covered for another 10 min.
- Heat a heavy skillet or grill pan without fat until it smokes visibly, and grill the meat in batches for 1 min. per side until it has dark char marks.
- Pour the leftover marinade into the hot pan and reduce for 1–2 min. until syrupy, then toss the meat in it.
- Fry four eggs sunny-side up in the remaining sesame oil over medium heat for 3 min. until the whites are set and the yolks still runny.
- Fill bowls with the hot rice, fan the meat out on top, place a fried egg on each and serve sprinkled with sesame seeds and scallion rings.
