Ingredients · for 4 servings
200 g trahanas (soured wheat granules)
1.2 l vegetable stock
2 tomatoes
1 onion
150 g feta
4 tbsp olive oil
Salt
Pepper
Instructions
- Sweat the onion in olive oil until translucent, add the grated tomatoes and let them reduce.
- Pour in the stock and bring to a boil.
- Sprinkle in the trahanas and let it swell for 12 minutes, stirring.
- Thin with water if needed – the soup thickens considerably as it stands.
- Serve with crumbled feta and a thread of olive oil.
