Instructions

  1. Sweat the onion in olive oil until translucent, add the grated tomatoes and let them reduce.
  2. Pour in the stock and bring to a boil.
  3. Sprinkle in the trahanas and let it swell for 12 minutes, stirring.
  4. Thin with water if needed – the soup thickens considerably as it stands.
  5. Serve with crumbled feta and a thread of olive oil.
