Shrimp in Butter
Shrimp briefly sautéed in butter with garlic and lemon, served sizzling with parsley and white bread.

Ingredients · for 4 servings
600 g raw shrimp
80 g butter
5 cloves garlic
2 tbsp olive oil
1 lemon
1 tsp pul biber (Aleppo pepper)
1/2 bunch parsley
1 rustic white bread
Salt, pepper
Instructions
- Peel the shrimp, pull out the dark vein along the back with a small knife, rinse under cold water and pat very dry – wet shrimp steam instead of searing.
- Slice the garlic thinly, finely chop the parsley and cut the white bread into thick slices.
- Melt the butter and olive oil in an ovenproof pan over medium heat and let the garlic infuse for 1–2 min. until fragrant but still pale.
- Turn up the heat, add the shrimp in a single layer and sear 1.5–2 min. per side until they turn a strong orange and curl slightly.
- Season with salt, pepper, pul biber and the juice of half a lemon and toss for 30 sec. until the butter turns foamy and velvety around the shrimp.
- Serve immediately sizzling in the pan, sprinkle with parsley and offer the white bread for mopping up the garlic butter.
