Shrimp in Butter

Instructions

  1. Peel the shrimp, pull out the dark vein along the back with a small knife, rinse under cold water and pat very dry – wet shrimp steam instead of searing.
  2. Slice the garlic thinly, finely chop the parsley and cut the white bread into thick slices.
  3. Melt the butter and olive oil in an ovenproof pan over medium heat and let the garlic infuse for 1–2 min. until fragrant but still pale.
  4. Turn up the heat, add the shrimp in a single layer and sear 1.5–2 min. per side until they turn a strong orange and curl slightly.
  5. Season with salt, pepper, pul biber and the juice of half a lemon and toss for 30 sec. until the butter turns foamy and velvety around the shrimp.
  6. Serve immediately sizzling in the pan, sprinkle with parsley and offer the white bread for mopping up the garlic butter.
