Ingredients · for 4 servings
700 g beef shoulder (thinly sliced)
150 g breadcrumbs
80 g pecorino
1/2 bunch flat-leaf parsley
2 garlic cloves
2 onions
12 bay leaves
80 g black olives
6 tbsp olive oil
1 lemon
Salt, pepper
Instructions
- Pound the meat slices thin between cling film and cut into roughly 8 x 10 cm rectangles; quarter the onions and separate the layers.
- Toast 100 g breadcrumbs in 3 tbsp olive oil over medium heat for 3-4 min until golden brown, let cool, and mix with the grated pecorino, chopped parsley, finely grated garlic, chopped olives, salt and pepper.
- Brush the meat pieces with 2 tbsp olive oil, add 1 tbsp of the filling to each, fold in the sides and roll up tightly into rolls.
- Thread three to four rolls alternating with an onion layer and a bay leaf onto skewers, and brush all around with the remaining oil.
- Roll the skewers in the remaining breadcrumbs and grill over intense embers or in a grill pan for 10-12 min all around, turning every 3 min, until the coating is crisply browned.
- Let rest for 5 min and serve hot with lemon wedges.
