Salame di Cioccolato (Chocolate Salami)

Ingredients · for 8 servings

Instructions

  1. Break the butter cookies coarsely in a bag with a rolling pin – deliberately leave pieces of varying sizes so the cut surface looks speckled; coarsely chop the walnuts.
  2. Coarsely chop the chocolate and melt with the butter over a bain-marie on low heat, then let cool to hand-warm.
  3. Beat the egg yolks with 100 g powdered sugar, the cocoa powder and a pinch of salt until creamy for 2 min., then quickly work in the lukewarm chocolate butter.
  4. Fold in the cookie pieces, walnuts and rum until all pieces are evenly coated in the mixture.
  5. Shape the mixture on baking paper into a firm roll about 6 cm in diameter, wrap tightly, twist the ends, and chill for at least 4 hr.
  6. Unwrap the firm roll, dust all over with powdered sugar, and cut into 1 cm thick slices with a sharp knife.
