Salame di Cioccolato (Chocolate Salami)

Ingredients · for 8 servings
200 g dark chocolate
150 g butter
100 g powdered sugar
2 egg yolks
250 g butter cookies
3 tbsp cocoa powder
2 tbsp dark rum
1 pinch salt
80 g walnuts
3 tbsp powdered sugar for dusting
Instructions
- Break the butter cookies coarsely in a bag with a rolling pin – deliberately leave pieces of varying sizes so the cut surface looks speckled; coarsely chop the walnuts.
- Coarsely chop the chocolate and melt with the butter over a bain-marie on low heat, then let cool to hand-warm.
- Beat the egg yolks with 100 g powdered sugar, the cocoa powder and a pinch of salt until creamy for 2 min., then quickly work in the lukewarm chocolate butter.
- Fold in the cookie pieces, walnuts and rum until all pieces are evenly coated in the mixture.
- Shape the mixture on baking paper into a firm roll about 6 cm in diameter, wrap tightly, twist the ends, and chill for at least 4 hr.
- Unwrap the firm roll, dust all over with powdered sugar, and cut into 1 cm thick slices with a sharp knife.
