Peaches in Wine Syrup

Instructions

  1. Score the peaches crosswise, dip in boiling water for 40 sec., shock in ice water and peel; then halve and pit them.
  2. Drizzle the halves immediately with the lemon juice so they don't brown.
  3. Bring the white wine, water, sugar, cinnamon sticks, the thinly peeled lemon zest, the split vanilla pod and a pinch of salt to a boil and let bubble for 5 min.
  4. Place the peach halves cut-side down in the liquid and poach gently over low heat for 12–15 min. until glossy but still holding their shape.
  5. Lift the fruit out with a slotted spoon into a tall glass container and reduce the liquid uncovered for another 10 min. to a syrupy consistency.
  6. Pour the hot syrup over the peaches, let cool and chill for at least 12 hr.; serve well chilled with some syrup in bowls.
