Peaches in Wine Syrup
Peach halves steeped in white wine syrup with cinnamon stick and lemon zest, left to infuse overnight.

Ingredients · for 4 servings
8 peaches
500 ml white wine
250 ml water
250 g sugar
2 cinnamon sticks
1 organic lemon (zest)
1 tbsp lemon juice
1 vanilla pod
1 pinch salt
Instructions
- Score the peaches crosswise, dip in boiling water for 40 sec., shock in ice water and peel; then halve and pit them.
- Drizzle the halves immediately with the lemon juice so they don't brown.
- Bring the white wine, water, sugar, cinnamon sticks, the thinly peeled lemon zest, the split vanilla pod and a pinch of salt to a boil and let bubble for 5 min.
- Place the peach halves cut-side down in the liquid and poach gently over low heat for 12–15 min. until glossy but still holding their shape.
- Lift the fruit out with a slotted spoon into a tall glass container and reduce the liquid uncovered for another 10 min. to a syrupy consistency.
- Pour the hot syrup over the peaches, let cool and chill for at least 12 hr.; serve well chilled with some syrup in bowls.
