Andalusian salad of finely diced tomato, cucumber and pepper with cumin.

Ingredients · for 4 servings
4 ripe tomatoes
1 cucumber
1 green pepper
1 onion
1 garlic clove
1 tsp cumin- 6 tbsp olive oil
2 tbsp sherry vinegar
Salt
Instructions
- Cut all the vegetables into very fine, even dice.
- Crush the garlic with the cumin and salt in a mortar.
- Stir it into a vinaigrette with olive oil and vinegar.
- Pour over the vegetables, toss and serve well chilled.
