Instructions

  1. Wash the rice, cook it and let it steam only briefly – onigiri are shaped from warm rice.
  2. Drizzle the salmon with soy sauce, fry or grill it and flake it apart with a fork.
  3. Dampen your hands with water and rub with a little salt – this keeps everything from sticking and seasons the onigiri.
  4. Flatten a handful of rice, place a spoonful of the salmon filling in the center and cover with more rice.
  5. Shape into a firm triangle with both hands, turning it repeatedly – firm pressure on the outside, loose on the inside.
  6. Wrap with a strip of nori and sprinkle with sesame seeds; enjoy lukewarm or cold as a classic lunchbox treat.
