Smoked Salmon Omelette

6 eggs
150 g smoked salmon
3 tbsp crème fraîche
1 bunch chives
20 g butter
1/2 lemon
1 tsp coarsely ground pepper

Instructions
- Cut the smoked salmon into strips about 2 cm wide and finely chop the chives.
- Whisk the eggs with 2 tbsp crème fraîche, a little salt and pepper until the mixture is evenly yellow, then stir in two-thirds of the chives.
- Melt the butter in a 24 cm nonstick pan over low heat, without letting it brown.
- Pour in the egg mixture and slowly push it from the edge toward the center with a spatula until soft folds form after about 3 min. and the surface is still glossy and moist.
- Lay the salmon strips and the remaining crème fraîche on one half, fold the omelette over and let it sit in the pan for another 30 sec.
- Slide onto two warmed plates, sprinkle with the remaining chives and pepper, and serve immediately with a squeeze of lemon.
