Smoked Salmon Omelette

Instructions

  1. Cut the smoked salmon into strips about 2 cm wide and finely chop the chives.
  2. Whisk the eggs with 2 tbsp crème fraîche, a little salt and pepper until the mixture is evenly yellow, then stir in two-thirds of the chives.
  3. Melt the butter in a 24 cm nonstick pan over low heat, without letting it brown.
  4. Pour in the egg mixture and slowly push it from the edge toward the center with a spatula until soft folds form after about 3 min. and the surface is still glossy and moist.
  5. Lay the salmon strips and the remaining crème fraîche on one half, fold the omelette over and let it sit in the pan for another 30 sec.
  6. Slide onto two warmed plates, sprinkle with the remaining chives and pepper, and serve immediately with a squeeze of lemon.
