6 eggs
150 g feta
2 tomatoes
1 spring onion
3 tbsp olive oil
1 tsp oregano
Parsley
Pepper
Instructions
- Whisk the eggs with pepper and oregano.
- Sauté the diced tomatoes and the spring onion in olive oil for 3 minutes.
- Add the egg mixture and let it set over gentle heat.
- Scatter the crumbled feta over one half.
- Fold the omelette over and serve with parsley.
