Zucchini Fritters
Golden-brown zucchini fritters with dill, spring onion and feta, eaten warm or cold with yogurt.

Ingredients · for 4 servings
600 g zucchini
100 g feta
3 eggs
4 spring onions
1/2 bunch dill
1/2 bunch parsley
100 g flour
4 tbsp olive oil
250 g yogurt
Salt, pepper
Instructions
- Coarsely grate the zucchini, mix with 1 tsp salt and let sit for 10 min., then squeeze out firmly by hand – the drier the shreds, the crispier the fritters.
- Cut the spring onions into fine rings, finely chop the dill and parsley, and crumble the feta.
- Mix the zucchini, herbs, spring onions, feta and eggs, sift the flour over the top and stir into a thick batter; season with pepper and a little salt.
- Heat the olive oil in a large pan over medium heat until a drop of batter sizzles immediately.
- Drop in 1 tbsp of batter per fritter, flatten slightly and fry for 3–4 min. per side until golden brown and easily releasing from the pan.
- Drain briefly on paper towels and serve with the yogurt, warm or cooled.
