Maakouda (Potato Fritters)
Spiced potato patties with garlic, parsley and cumin, fried crisp on the outside.

Ingredients · for 4 servings
800 g starchy potatoes
2 eggs
3 garlic cloves
1/2 bunch parsley
1 tsp cumin
1 tsp sweet paprika
1/2 tsp turmeric
4 tbsp flour
500 ml frying oil
Salt, pepper
Instructions
- Peel the potatoes, cut into evenly sized pieces and boil in salted water for 20 minutes until soft, then drain and let steam off briefly in the pot.
- Mash the potatoes finely while still hot, grate in the garlic, finely chop the parsley and mix in the cumin, paprika and turmeric.
- Knead in one egg and 2 tbsp flour and season generously with salt and pepper – the mixture should be moldable and not stick to your hands.
- With damp hands, shape into flat patties about 7 cm across; beat the second egg and put the remaining flour on a plate.
- Heat the frying oil to 175°C, coat the patties first thinly in flour, then in egg, and fry in batches for 3 minutes per side until golden brown, without crowding the pan.
- Drain on paper towels, salt lightly and serve hot – at the market they're simply eaten out of hand.
