Maakouda (Potato Fritters)

Instructions

  1. Peel the potatoes, cut into evenly sized pieces and boil in salted water for 20 minutes until soft, then drain and let steam off briefly in the pot.
  2. Mash the potatoes finely while still hot, grate in the garlic, finely chop the parsley and mix in the cumin, paprika and turmeric.
  3. Knead in one egg and 2 tbsp flour and season generously with salt and pepper – the mixture should be moldable and not stick to your hands.
  4. With damp hands, shape into flat patties about 7 cm across; beat the second egg and put the remaining flour on a plate.
  5. Heat the frying oil to 175°C, coat the patties first thinly in flour, then in egg, and fry in batches for 3 minutes per side until golden brown, without crowding the pan.
  6. Drain on paper towels, salt lightly and serve hot – at the market they're simply eaten out of hand.
