Massaman Curry

Ingredients · for 4 servings
700 g beef stew meat
3 tbsp massaman curry paste
400 ml coconut milk
300 ml beef broth
400 g potatoes
1 onion
60 g peanuts
2 tbsp fish sauce
2 tbsp palm sugar
2 tbsp tamarind paste
1 cinnamon stick
3 cardamom pods
2 tbsp oil
300 g jasmine rice
Instructions
- Simmer the thick coconut cream in the oil and fry the curry paste in it for 2 min until fragrant.
- Add the beef and sear it all over in the paste.
- Pour in the remaining coconut milk, broth, cinnamon and cardamom.
- Cover and braise gently for 60 min, until the meat is almost tender.
- Add the diced potatoes, onion wedges and peanuts and cook along for 20 min.
- Season with fish sauce, palm sugar and tamarind – the curry lives on the balance of sweet, salty and sour.
- Serve with jasmine rice; it tastes even deeper the next day.
