Ingredients · for 2 servings
400 g ground chicken (or finely chopped breast fillet)
4 garlic cloves
3–5 Thai chilies
2 tbsp fish sauce
1 tbsp oyster sauce
1 tbsp dark soy sauce
1 tsp sugar
2 handfuls holy basil (Thai basil as a substitute)
2 eggs
300 g rice
4 tbsp oil
Instructions
- Cook the rice. Coarsely crush the garlic and chilies in a mortar.
- Heat 2 tbsp oil until very hot and fry the garlic-chili paste for 30 sec.
- Add the ground chicken and fry over high heat, breaking it up, until it has browned spots.
- Stir in the fish sauce, oyster sauce, soy sauce and sugar and let caramelize for 1 min.
- Take off the heat and fold in the basil – it should just wilt.
- Fry two crispy fried eggs in the remaining oil – the edges should be bubbly and crisp, the yolk still runny.
- Serve the ground chicken over rice, topped with the fried egg – the creamy yolk tames the heat.
