Hambagu (Japanese Hamburg Steak)
A juicy ground beef patty with braised onions and panko, pan-fried and glazed in a red wine-soy sauce.

Ingredients · for 4 servings
600g ground beef
1 onion
60g panko breadcrumbs
100ml milk
1 egg
1 pinch nutmeg
3 tbsp ketchup
3 tbsp soy sauce
100ml red wine
1 tbsp butter
2 tbsp oil
Salt, pepper
Instructions
- Finely dice the onion, sauté in 1 tbsp oil over medium heat for 6–8 minutes until translucent, and let cool completely.
- Soak the panko in the milk for 5 minutes, then knead vigorously for 2 minutes with the ground beef, egg, onions, nutmeg, salt and pepper, until the mixture binds together.
- Shape into four oval patties, tossing each one back and forth between your hands several times to remove air pockets, and press a dimple into the center.
- Sear in the remaining oil over high heat for 2 minutes per side, then cover and cook through over low heat for 8 minutes, and remove from the pan.
- Deglaze the pan drippings with red wine, stir in the ketchup and soy sauce, and simmer for 3–4 minutes until the sauce is glossy and lightly thickened.
- Swirl the butter into the sauce, pour over the patties and serve immediately.
