Hambagu (Japanese Hamburg Steak)

A juicy ground beef patty with braised onions and panko, pan-fried and glazed in a red wine-soy sauce.

Instructions

  1. Finely dice the onion, sauté in 1 tbsp oil over medium heat for 6–8 minutes until translucent, and let cool completely.
  2. Soak the panko in the milk for 5 minutes, then knead vigorously for 2 minutes with the ground beef, egg, onions, nutmeg, salt and pepper, until the mixture binds together.
  3. Shape into four oval patties, tossing each one back and forth between your hands several times to remove air pockets, and press a dimple into the center.
  4. Sear in the remaining oil over high heat for 2 minutes per side, then cover and cook through over low heat for 8 minutes, and remove from the pan.
  5. Deglaze the pan drippings with red wine, stir in the ketchup and soy sauce, and simmer for 3–4 minutes until the sauce is glossy and lightly thickened.
  6. Swirl the butter into the sauce, pour over the patties and serve immediately.
