Ingredients · for 4 servings
400 g spinach
4 tbsp sesame seeds
1 tbsp soy sauce
1 tbsp sugar
1 tsp mirin
Instructions
- Toast the sesame seeds in a dry pan until golden brown, fragrant and popping.
- Coarsely grind the warm sesame seeds in a mortar – some texture should remain.
- Mix with the soy sauce, sugar and mirin into a thick paste.
- Blanch the spinach for 1 min, shock in ice water and squeeze out very thoroughly.
- Cut into 4 cm pieces and toss lightly with the sesame dressing.
- Serve at room temperature or chilled in small bowls.
