Zucchine alla Scapece
Golden-fried zucchini slices marinated cold in white wine vinegar with garlic and plenty of mint.

Ingredients · for 4 servings
800g zucchini
3 garlic cloves
1 bunch mint
6 tbsp white wine vinegar
8 tbsp olive oil
Salt, pepper
Instructions
- Wash the zucchini, slice about 5mm thick, spread on paper towels, salt lightly, and let sit for 10 min to draw out moisture.
- Pat the slices dry and fry in batches in 4 tbsp hot olive oil for 2–3 min per side, until golden – they should color but not fall apart.
- Drain the fried slices briefly on paper towels and layer them in a shallow dish.
- Slice the garlic thinly, strip the mint leaves from the stems, and scatter both between the layers of zucchini.
- Whisk the white wine vinegar with the remaining olive oil and a little pepper, and pour evenly over the layers until everything glistens with the dressing.
- Let marinate at room temperature for at least 2 hours, and serve cold as an appetizer or side with grilled dishes.
