Olive Oil Fava Beans

Instructions

  1. Wash the fava beans, trim the stem end and blossom tip, pull off the tough side strings, and cut the pods into 3 cm long pieces.
  2. Cut the onions into fine half-rings and braise in the olive oil over gentle heat for 8 min. until soft and sweet but without taking on color.
  3. Add the bean pieces, season with sugar and salt, toss briefly, and pour in 150 ml hot water.
  4. Cover and braise over low heat for 25–30 min. until the pods are butter-soft and only a thick, oily broth remains in the pot.
  5. Fold in the lemon juice and the finely chopped dill, then let cool to room temperature right in the pot so the flavor settles.
  6. Stir the yogurt with the crushed garlic cloves and a pinch of salt, and serve the cold beans with a spoonful on top.
