Olive Oil Fava Beans
Young fava beans in the pod, braised in olive oil with onions and dill, served cold with garlic yogurt.

800 g young fava beans in the pod
2 onions
120 ml olive oil
1 tsp sugar
1 bunch dill
1 lemon
400 g yogurt
2 garlic cloves
1 tsp salt
Instructions
- Wash the fava beans, trim the stem end and blossom tip, pull off the tough side strings, and cut the pods into 3 cm long pieces.
- Cut the onions into fine half-rings and braise in the olive oil over gentle heat for 8 min. until soft and sweet but without taking on color.
- Add the bean pieces, season with sugar and salt, toss briefly, and pour in 150 ml hot water.
- Cover and braise over low heat for 25–30 min. until the pods are butter-soft and only a thick, oily broth remains in the pot.
- Fold in the lemon juice and the finely chopped dill, then let cool to room temperature right in the pot so the flavor settles.
- Stir the yogurt with the crushed garlic cloves and a pinch of salt, and serve the cold beans with a spoonful on top.
