Egg Pide
Pide boat with kaşar cheese and sucuk, crowned with an egg shortly before the end of baking.

Ingredients · for 4 servings
500 g flour
1 packet yeast
300 ml lukewarm water
1 tsp sugar
1 tsp salt
300 g kaşar cheese
150 g sucuk
4 eggs
40 g butter
1 tsp Aleppo pepper flakes
Instructions
- Let the yeast foam with the sugar in the lukewarm water for 10 min., knead with flour and salt for 8 min. into a smooth dough and let rise covered for 60 min. until doubled in size.
- Preheat the oven with the tray inside to 250 °C; coarsely grate the kaşar cheese and cut the sucuk into thin slices.
- Quarter the dough and roll each piece into a narrow oval about 30 cm long, keeping the center thinner than the edges.
- Spread the cheese and sucuk down the middle, fold the long sides over it and pinch the ends firmly into points, leaving a well in the center.
- Bake for 8 min., then slide an egg into the well of each and bake for another 4–5 min. until the white is set and the yolk still soft.
- Brush with the melted butter, sprinkle with Aleppo pepper flakes and serve immediately while the yolk still runs when cut.
