Ingredients · for 4 servings
300 g flour
1 egg
130 ml water
1 tsp salt
250 g ground beef
1 onion
600 ml rich beef stock
80 g butter
1 tbsp red pepper paste
400 g yogurt
2 cloves garlic
60 g walnuts
Instructions
- Knead the flour, egg, water and salt into a firm pasta dough, cover and let rest for 30 min.; grate the onion very finely and knead together with the ground beef, salt and pepper into a smooth filling.
- Roll the dough out paper-thin, cut into 3 cm squares, place a pea-sized portion of filling on each and pinch the corners together over the center.
- Pack the manti tightly, side by side, into a buttered baking dish, drizzle with half the melted butter and roast at 200 °C (400 °F) for about 15 min. until light golden brown.
- Stir the red pepper paste into the beef stock, pour hot over the roasted dumplings, cover the dish with foil and bake for another 25 min. until the liquid is almost completely absorbed.
- Whisk the yogurt with the crushed garlic and a little salt until smooth; roughly chop the walnuts and foam the remaining butter.
- Lift the manti onto plates, cover with the garlic yogurt, pour over the browned butter and serve sprinkled with the walnuts.
