Instructions

  1. Line a greased 26 cm tart pan with the shortcrust pastry, prick the base and blind-bake with parchment and baking beans at 190°C for 12 min.
  2. Cut the onions into thin rings and sauté in the butter over low heat for 12–15 min. until very soft, pale golden and sweet; add the caraway and toast for 1 min.
  3. Whisk the crème fraîche with the eggs, nutmeg, pepper and a little salt — the Munster already brings plenty of salt.
  4. Spread the cooled onions over the pre-baked base and pour the custard over them.
  5. Cut the Munster, rind on, into 1 cm thick slices and lay them evenly over the custard so they spread out while baking.
  6. Bake in the preheated oven at 200°C for 30–35 min. until the cheese is browned and the custard has set, then let rest for 10 min. and serve lukewarm.
