200 g freshly cooked, hot rice
1 very fresh egg
1–2 tsp soy sauce
1 spring onion
1 tsp sesame seeds
Nori flakes (optional)
Instructions
- Cook the rice fresh – it needs to be steaming hot, as the heat is what binds the egg into a creamy texture.
- Put the hot rice into a bowl and form a small well in the center.
- Crack the very fresh egg (use only the best quality!) into the well.
- Drizzle soy sauce over the top.
- Stir vigorously and quickly with chopsticks until the rice turns pale, fluffy and creamy.
- Sprinkle with spring onion rings, sesame seeds and nori, and eat right away.
