Tajine Khodra Chtwia
A winter stew of turnip, white cabbage, carrots and potatoes in a fragrant saffron broth.

Ingredients · for 4 servings
1 turnip
300 g white cabbage
4 carrots
500 g waxy potatoes
2 onions
4 cloves garlic
1 pinch saffron threads
1 tsp turmeric
1.5 tsp cumin
1/2 bunch cilantro
5 tbsp olive oil
Salt, pepper
Instructions
- Peel the turnip and potatoes and cut into 3 cm chunks, slice the carrots into thick rounds and the white cabbage into wide strips.
- Cut the onions into half-rings, chop the garlic, and sauté both in olive oil in a large stew pot over medium heat for 6 min. until translucent.
- Stir in the saffron, turmeric and cumin and toast for 1 min. until the pot smells fragrant.
- Add the turnip and carrots, pour in 500 ml water, season with salt and pepper and braise covered over low heat for 25 min.
- Add the potatoes and cabbage and cook covered for another 25–30 min. until everything is tender and the broth has reduced by about half.
- Sprinkle with chopped cilantro and serve hot in deep bowls with bread or couscous.
