Tahini and Grape Molasses

Ingredients · for 4 servings
150 g tahini
150 g pekmez (grape molasses)
1 tbsp sesame seeds
1 pinch salt
1 tsp cinnamon
1 flatbread
Instructions
- Stir the tahini jar vigorously until the separated oil has fully combined with the paste again – only then will it turn smooth later.
- Toast the sesame seeds in a dry pan over medium heat for 2–3 min. until light brown and starting to pop, then let cool.
- Put the tahini and pinch of salt into a bowl and stir smooth with a spoon.
- Pour in the pekmez in a thin stream while stirring continuously – the mixture first turns stiff and then, after 1–2 min., becomes smooth and glossy light brown again.
- Stir in the cinnamon and let the paste sit briefly until spreadable but not runny.
- Transfer to a small dish, sprinkle with the toasted sesame seeds and serve with fresh flatbread for breakfast tea.
